The Story Of Boondi

Boondi — tiny, round, crispy pearls of fried chickpea flour batter — are one of the most versatile and charming ingredients in Indian cooking and snacking. Made by dropping seasoned besan batter through a perforated ladle into hot oil, each tiny droplet of batter puffs and crisps into a perfectly spherical, golden ball that is simultaneously light and satisfying.
