The Story Of Char Magaz

Char magaz — translated literally as "four seeds" in Persian — is a traditional blend of four nutritious seeds: melon seeds, cucumber seeds, pumpkin seeds, and watermelon seeds, all shelled and prepared for immediate use. This distinctive seed mixture has been a valued ingredient in Mughal-influenced Indian cooking and traditional medicine for centuries, prized for its cooling, nourishing properties and its ability to add a delicate richness and creamy texture to both sweet and savoury preparations. Lioncroft's Char Magaz is carefully prepared from quality seeds, blended in authentic proportions.

In traditional Indian and Pakistani cooking, char magaz is most commonly used in the preparation of sharbat and traditional sweet drinks, where the seeds are soaked in water to release their cooling properties and blended into a light, refreshing beverage. Ground into a paste, char magaz is an important ingredient in traditional haleem and nihari — the slow-cooked, richly flavoured meat preparations of the Mughal culinary tradition — where it adds a creamy, slightly nutty body to the cooking liquid. In Ayurvedic and Unani medicine, the blend is valued for its cooling nature, believed to soothe internal heat and support urinary health. As a nutritious, protein-rich snack, the seeds can be eaten directly or scattered over salads and grain dishes. Lioncroft's Char Magaz is an authentic, quality product that connects modern kitchens to centuries of culinary wisdom.
