The Story Of Kewda Water

Kewda water — extracted from the fragrant flowers of the screw pine (Pandanus tectorius) — is one of the most hauntingly beautiful and distinctive floral essences used in Indian cooking and confectionery. With an aroma that is simultaneously floral, sweet, slightly grassy, and intensely evocative of the rich culinary traditions of Mughal India, kewda carries a fragrance that is entirely its own — reminiscent of rose water but with a deeper, more complex, almost woody undertone that gives it a unique and irreplaceable character. Lioncroft's Kewda Water is produced from quality pandanus flowers to deliver the authentic fragrance and flavour that genuine kewda preparations require.

Kewda is used to perfume the most celebratory and luxurious of Indian preparations — the magnificent biryani, where a few drops drizzled over the rice as it finishes cooking adds an ethereal, intoxicating fragrance that is the hallmark of a truly special preparation; the royal korma and shahi dishes of the Mughal culinary tradition; and sweet preparations including halwa, kheer, and sharbat, where its floral character adds a dimension of luxury and festivity. In Indian paan preparations, kewda is an important flavouring ingredient, and it is used in the production of certain traditional perfumes and aromatic preparations. A few drops go a remarkably long way, as its fragrance is potent and persistent. Lioncroft's Kewda Water brings the floral magic of this extraordinary ingredient to your kitchen in a convenient, quality format.

Tips on cooking

Convenient and ready straight from the pack — blends into marinades, rubs, stews, drinks and sauces across every cuisine.

1
Sprinkle a few drops into biryani and pulao.
2
Add to kheer, rabri and syrups for sweets.
3
Scent sherbets and cold drinks.
4
Use in place of rose water for a different floral note.
💡
Expert tip: Kewda is potent — measure in drops, not spoons. A little lifts a dish with fragrance; too much turns it soapy and perfumed.
